Located in an arid desert climate, Arnaud Casse's Terrazas del Pisque farm is an experimental field in the middle of the Andes. The forest he planted has a special microclimate that allows, among other things, 25 different varieties of coffee – some of them endemic – to grow. The farm is an ecosystem in itself, with fruit trees, herbs and its own beehives, an environment is created here with a great deal of knowledge that does not use pesticides and operates according to the highest ecological criteria.
Even the processing of the coffees does not follow a strict pattern, but is extremely diverse – we chose a Pacamara that was processed anaerobic honey.
