The natural processing ensures that this coffee has just the right combination of peach and apricot notes (including the associated fruity acidity), a medium, almost silky body and a round finish that sticks to your mind for a long time. A hot tip for a new favorite coffee, not just for fans of Ethiopian naturals!
Processing: The cherries are sorted and floated (unripe cherries float and are discarded). They are then dried in the shade for a day, then spread out on Raised African Beds and dried there for 20-30 days until the target moisture content is reached.
