The cherries for this Pacamara come from various small producers in the municipality of Salado Blanco in Huila, Colombia. With an average cultivation area of 1.5 hectares and facing plenty of challenges, the farmers are trained by the Cata Exports team in various topics: Knowledge of soil, clean agriculture, maintenance of technology in the preparation process, water treatment, fermentation and, of course, sensory advice are offered to ensure that the coffee produced meets standards. Reproducible fermentation and post-harvest protocols ensure consistently high quality green coffee.
The coffee is unpretentious, but its distinctiveness lies precisely in its apparent simplicity - it captivates us with its clarity and terroir, which reflects the region and the hard-working people involved in its production in a wonderful way.
