A very special combination of a new, relatively unknown variety and a mixture of anaerobic and natural processing (see below for more details) creates an aromatic diversity that once again pushed us to the limits of our label - we had so many impressions both in the nose and on the palate. Which is of course an absolutely positive thing, because we love discovering new notes with every sip and immersing ourselves in the complexity of a coffee like this. At the same time, it is incredibly clean in the cup, which makes it even more enjoyable.
Milenio F1 is a hybrid variety from Sudan Rume and T5296, which is known for its resilience, abundant yield and exceptional quality in the cup.
About the farm:
In the highlands of the Brunca region, Finca El Salitre is located at the foot of Cerro Chirripó, the highest mountain in Costa Rica. Managed by the Alvarado Fonseca family, who also run the Micromill Corzón de Jesús, the farm has earned a reputation for its experimental processing with several placements in the Cup of Excellence.
About the processing:
The cherries for this lot were natural processed - however, Micromill Corazon de Jesus' specialty is its own process called "natural reposado" - for this, the cherries rest in sealed containers under controlled conditions before the actual processing phase (hence the term "reposado"). This results in a short anaerobic fermentation. After this "resting phase", the cherries are slowly dried on raised beds and patios over a period of several weeks.
