This natural (dry) processed Typica Reserve comes from Hacienda La Papaya in the Saraguro region of northern Ecuador, situated in the dry-tropical climate of the Andes coast. Under the management of Juan Peña, one of the most renowned personalities on the Ecuadorian specialty scene, the farm has been cultivating different varieties since 2010, including Geisha, Pink Bourbon, Sidra and Typica.
We chose this lot because we love its tropical aromas, stunning sweetness and wonderfully fruity, playful acidity. And hopefully you will love it too!
About the processing: The dry processing begins with manual sorting of the cherries. They are then gently cleaned and dried in special rooms under controlled conditions (temperature, sunlight, humidity and air circulation). During this time that lasts between 20 and 30 days, the cherries are turned 3-4 times a day. They are then sorted again in the dry mill and the beans of the highest quality are prepared for export.
