Located in the Gedeo zone of the Gedeb district, the Chelbesa region is characterized by particularly dense, semi-forest vegetation. This has a particularly positive effect on the quality of the coffees produced here - and makes Chelbesa a great example of agroecology (as opposed to industrial agriculture).
SNAP Specialty Coffee built a new wet mill in the village of Danche in 2019 with the aim of buying only coffee cherries from the surrounding farmers in Chelbesa Village - with great success. The tanks of the wet mill were built of ceramic to facilitate fermentation through the stored heat and to achieve greater clarity in the coffees during processing.
Almost 500 farmers contributed their coffee cherries for this lot, which was processed natural (dry). The cherries were sorted and floated, afterwards cleaned with fresh water and dried on raised african beds for 28 to 35 days.
