About the coffee:
Choose your roast! We're once again indulging in the wonderful world of possibilities and treating ourselves to not just one, but two roasts from this lot. Because this coffee is simply too good not to be prepared using every possible method :)
The filter roast is optimized for pour-over and filter coffee machines, where we've focused on the floral notes. The espresso roast is characterized by its orange and chocolate notes and its silky-creamy texture, which melts in your mouth – whether in espresso or cappuccino.
About the producer:
Eli Espinoza came to the Chirinos region as a teenager to work as a coffee picker. After a while, he was able to buy his own land and produce his own coffee .
This now includes 4 hectares of coffee plantation in Pirias, Chirinos. His plots are spread throughout the village – all between 1800 and 2000 meters above sea level – and are mainly planted with Typica, Caturra, and Bourbon varieties. Only a small area is cultivated with Geisha plants. Processing takes place directly at the farm at 1800 meters.
Regarding processing:
After harvesting, the cherries are fermented in plastic bags in the shade for 24 hours. After floating (removing unripe cherries), the coffee is cleaned, pulped, and left in tanks for 24-36 hours. The parchments are then spread out on drying beds for 10-14 days, depending on the weather.
