Finca La Lucuma, San Ignacio
natural, 1750 m
Variety: Marshell

Lizana Morales Grimanes and her husband Marcelino Chinguel have been growing coffee on their farm La Lucuma for over 40 years - not without major obstacles. Following a devastating plague, they adapted to the circumstances and experimented with natural mutations of different varieties. The results are impressive: With their Marshell variety (named after Marcelino), they have been achieving consistent quality for years - we were able to taste this ourselves last year when we had it in our program for the first time.

The family is at the heart of La Lucuma. They only employ eight pickers during the harvest period, otherwise responsibilities are divided up within the family. Lizana is responsible for post-harvest protocols, while Marcelino takes care of the administrative side. The elder son, Franklin, supervises picking, while his younger brother Yocner manages quality control.

Processing: This coffee is processed dry (natural). The hand-sorted cherries are floated (to remove unripe cherries) and, after a rest period of 16-24 hours, are dried on raised beds in a solar dryer under controlled conditions for 25-30 days.
